Lausanne, a sustainable and eco-friendly destination. The city of Lausanne has a strong commitment to sustainability, something that is part of everyday life for each of its citizens: low food-miles are a top priority, with produce brought direct to the market from neighbouring farms, while Lausanne’s culinary artists are maestros of local and seasonal cuisine. Lausanne has everything it needs close by, and is one of the 15-minute cities where all essential services are within easy reach.
One of the many vital factors promoting sustainable development is local consumption near the point of production. Lausanne prioritises low food-miles and intends to remain rooted to the earth and the water. A great example is locally sourced perch fillet, a regional speciality that goes well with a good white wine.
The Brasserie de Montbenon offers traditional perch fillets on its menu, assuming of course that the fishermen have caught some. The brasserie has a large terrace which, in fine weather, offers a fabulous view of the lake, and is the perfect spot for tasting seasonal produce that has been put together with flair and imagination.
On Wednesdays and Saturdays, in the early morning, the traditional market sets itself up in the city. From the Place de la Riponne to the Place de Saint-François, the streets become a lively throng, with stalls offering fresh fruit and vegetables, meat and cheese from the region, as well as vegetarian dishes and all manner of bread made with specialty flours.
One of the fruit and vegetable stalls belongs to the Hess family, who run a farm in the heights of Lausanne. Many restaurateurs go there to get their supplies for their restaurant table.
Fish and white wine belong together. Nothing beats a glass of white wine straight from the terraced vineyards of Lavaux, designated a UNESCO World Heritage site. Lavaux overlooks Lake Geneva and offers an utterly breathtaking view of the lake and mountains. Winemaking is a venerable tradition in the Lausanne region, and many winegrowers produce their own wine. All that’s left to do now is settle down and enjoy the local fare. Cheers!
